Roasted Garlic Tomato Sauce

Ingredients


· 15 Peeled Tomatoes

· 1 White Onion

· 3 Carrots

· 3 stalks of Celery

· 3 leaves of Basil

· 3 sprigs of Thyme

· 1 bulb of Garlic Roasted

· 10 beet stalks


Instructions


1. Slice the skin of a tomato into an X and place in boiling water for 2 – 3 minutes.

2. Transfer to ice water to remove the peels. (Save the peels for tomato powder!)

3. Crush tomatoes by hand and bring to a boil.

4. Cut a bulb of garlic in half and drizzle with oil and salt. Wrap in foil and roast for 50 minutes at 400.

5. Roughly cut onion, carrots, celery, and beet stalks. Bruise the basil and thyme. Drizzle them with olive oil and roast them for 50 minutes on a foil lined tray. (I put the garlic on the same tray.)

6. Blend the roasted vegetables and mix the puree into the boiling tomatoes

7. Cover and simmer for 30 minutes

8. Can in a water bath for 40 minutes.
