Perfect Pineapple Upside Down Cake

Ingredients

· 1/2 cup unsalted butter

· 3/4 cup light brown sugar, packed

· One pineapple cored and sliced with a Pineapple Corer

· 1 small jar of Maraschino cherries

· 1 cup 1 to 1 GF flour

· 3/4 cup granulated sugar

· 2 tsp baking powder

· pinch salt, optional and to taste

· 1 large egg

· 1/2 cup buttermilk

· 1/3 cup sour cream

· 3 tbs vegetable oil

· 2 tsp vanilla extract


Instructions


1. Melt Butter and pour into the bottom of a closed springform pan

2. Sprinkle brown sugar evenly into the butter

3. Core a pineapple with this cutter

4. Keep 1 complete ring for the middle and cut the rest in half

5. Place the full ring in the center and place the halves around the center in a fan.

6. Place cherries in all of the holes and empty spots

7. Whisk the dry ingredients together

8. Beat the wet ingredients together

9. Lightly add the wet to the dry mixture. Don’t over mix. Fold it together.

10. Pour the batter over the pineapples in the springform pan

11. **Important** Place the springform pan on a cookie sheet to bake to catch any of the liquid that may run out of the pan.

12. Bake for 40 minutes at 350. Remove and let it sit on a wire rack for 30 minutes before flipping.

13. Place a plate under it and flip.

14. Slice and enjoy
