Fluffy Gluten-Free Pancakes
Ingredients
3 eggs separated (keep whites and yolks)
1 ¼ cup of Gluten Free 1 to 1 flour
1 tbs. Sugar
1 tsp Baking Powder
2 tsp Ground Cinnamon
¼ tsp salt
2 ¼ c. Buttermilk
1 tsp. vanilla extract
3 tbs. Softened Butter
Sprinkles (optional)
Butter and Syrup (to serve)
Instructions
1. Separate 3 eggs. Keep both the yolks and the whites
2. Mix together all the dry ingredients
3. In a separate bowl, mix together the buttermilk, egg yolks, and vanilla extract
4. Slowly whisk in the dry ingredients. I do it in thirds.
5. Beat in the softened butter. At this point, you may need to add in a bit more liquid to make sure they are the correct consistency.
6. Beat the egg whites until they are frothy. (more than foamy, less than meringue)
7. Fold the egg whites into the mixture.
8. Cook them on a griddle. At this point, you can add sprinkles, chocolate chips, or fruit if that floats your boat
9. Serve with butter and syrup of course.
